What each ingredient does

Beef
Tender rump becomes succulent and tender after long, slow simmering that breaks down connective tissue.
Rice flour
Thickens the broth into a smooth gravy as its starch swells with heat.
Mushroom catsup
Adds deep savory umami flavor to the broth.
Lemon rind
Contributes aromatic citrus oils that brighten the rich, long-cooked stew.

The step that matters

Mixing the rice flour smoothly before adding it to the stew. Flour added directly to hot liquid clumps as its starch grains swell unevenly. Whisking it smooth with a cool liquid first lets the starch disperse evenly, so the stew thickens without lumps.
