Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Palates
Connective tissue that softens into a tender, silky texture during long, slow stewing.
Good veal broth
Adds moisture and savory depth while the palates stew.
Onion with cloves
Contributes aromatic flavor to the simmering liquid.
Carrots
Add gentle sweetness and aroma to the broth.

The step that matters

Simmer the ox-tails slowly until tender. Ox-tail meat is rich in connective tissue, which breaks down into gelatin only with long, gentle simmering. Boiling hard or stopping early leaves the meat tough and stringy.

Swap the onion

How well each one fits the dish's main ingredients (veal, pepper, clove, carrot, parsley):

  1. Parsnipfits better
  2. Turnipfits better
  3. Capsicumfits better
