Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox-tail
Main meat that becomes tender through long gentle simmering in gravy.
Good beef gravy
Liquid that cooks the ox-tail and carries its savory beef flavor.
Clarified butter
Fat that helps the bread crumb coating brown evenly and adds richness.
Fine bread crumbs
Coating that forms a crisp, browned crust when grilled or baked.

The step that matters

Simmer gently until very tender. Vigorous boiling toughens and breaks up the meat, while slow simmering breaks down connective tissue into tender, gelatinous texture. Keeping the heat low lets the collagen convert gradually without drying the meat.

Swap the cabbage

The recipe marks cabbage as optional. How well each one fits the dish's main ingredients (pepper, butter, bread, beef):

  1. Tomatofits better
  2. Potatofits better
  3. Capsicumfits better
  4. Cabbagethe original

Fit is the average pairing score against pepper, butter, bread, beef. Candidates are from the same food group and used in at least 100 recipes.
