Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl
Forms the main body of the dish, cooked whole so the meat stays moist under the crust.
Forcemeat (stuffing)
Fills the breast, adding moisture and flavour as the bird roasts.
Lukewarm butter
Carries fat over the crumbs, promoting browning and a golden, crisp surface.
Very fine bread crumbs
Form a crisp, golden coating that browns in the heat.

The step that matters

Returning the fowl to the fire for browning. Browning depends on surface heat and fat; the crumbs and butter must brown evenly without burning. Watch closely, since the crust can darken faster than the meat cooks through.
