Curried Sweetbreads

Ingredients

Directions

Prepare the sweetbreads

  1. Wash and soak the sweetbreads as usual.

  2. Boil water with a little coarse sea salt and a whole onion.

  3. Simmer the sweetbreads in the boiling water for 10 minutes, or use weak veal broth.

  4. Remove the sweetbreads and let them cool completely on a drainer.

  5. Cut the cooled sweetbreads into half‑inch slices.

Make the curry

  1. Optionally, flour and lightly fry the slices in butter, or place them in curried gravy.

  2. For added flavor, stew 1 ounce of freshly grated coconut in the gravy before adding the sweetbreads.

  3. Stew the sweetbreads in the gravy gently for 20 to 30 minutes.

  4. Add lemon juice or chili vinegar to taste.

  5. Serve the curry very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; gentle simmering and stewing keep them tender and moist in the gravy.
Butter
Fat for frying the floured slices, giving browning and a rich flavor.
Flour
Light coating on the slices that helps them brown when fried in butter.
Lemon juice or chili vinegar
Acidity that brightens the rich, spiced gravy.

The step that matters

Gentle simmering of the sweetbreads. Boiling hard or overcooking toughens the delicate sweetbread membranes and proteins, so they should simmer gently and be stewed only as long as needed.

Swap the coconut

The recipe marks coconut as optional. How well each one fits the dish's main ingredients (onion, veal, flour, butter, lemon):

  1. Avocadofits about as well
  2. Limefits about as well
  3. Coconutthe original
  4. Orangefits about as well

Fit is the average pairing score against onion, veal, flour, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
