A Good Mutton Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 400°F (200°C).

  2. Butter a dish and line it with the pastry.

  3. Remove all fat from the mutton and separate the flesh from the bones without damaging it.

  4. Slice the mutton into cutlets of equal thickness.

  5. Season the cutlets with salt and pepper or cayenne.

  6. Layer the cutlets in the dish, sprinkling finely minced herbs between the layers.
