Ingredients

Directions

Prepare the chicken

  1. Remove the white flesh from the fowl and cut it into pieces.

  2. Melt the butter in a small saucepan over low heat and add the chicken pieces.

  3. Season with salt, mace, and cayenne, and stew gently for about 10 minutes without browning.

  4. Transfer the chicken to a dish with the butter and its own juices, and let it cool.

Make the filling

  1. Mince the chicken with a sharp knife.

  2. Heat the minced chicken in a little white sauce without boiling.

Fill and serve

  1. Fill the patty crusts or vol-au-vents with the chicken mixture just before serving.

  2. Alternatively, stew the minced chicken with strong gravy and bake the patties for 15 to 18 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl
Provides the tender white meat that forms the body of the filling.
Butter
Gently cooks the chicken and carries its juices, adding richness and moisture.
White sauce
Binds the minced chicken into a moist, spreadable filling without drying it out.

The step that matters

Stew without browning. Cooking the chicken gently in butter keeps the flesh tender and moist. Browning or boiling would toughen the proteins and dry out the filling.

Swap the mace

  2. Thymefits better
