Tartlets

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Roll out the pastry dough and cut it into rounds.

  2. Cut twelve smaller rings from the rounds using a small cutter.

  3. Moisten the rings with cold water or egg white.

  4. Place the rings on the remaining pastry rounds to form rims.

  5. Bake in a 400°F (200°C) oven for 10 to 12 minutes.

  6. Fill the warm tartlets with preserve.

  7. Cut small ornaments from the remaining pastry and bake until light in color.

  8. Place the ornaments on top of the filled tartlets.

  9. Serve the tartlets cold or reheat in the oven for 1 minute before serving.
