Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Pour boiling milk over the bread crumbs and butter in a bowl.

  2. Cover and let stand until the bread is well soaked.

  3. Stir in sugar, 3 egg yolks, candied orange rind, and nutmeg until combined.

  4. Let the mixture cool.

  5. Pour it into a baking dish.

Top and bake

  1. Beat the egg whites until firm peaks form.

  2. Mix in sifted sugar.

  3. Spread the egg white mixture over the top of the pudding.

  4. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the hot milk and form the soft, bulky body of the pudding.
Eggs
Yolks set the custard, while whites whipped to peaks form a light, crisp-topped meringue.
Milk
Soaks the bread and, with the eggs, forms the custard that sets as it bakes.
Sugar
Sweetens the pudding and helps the egg white topping stay glossy and stable.
Butter
Adds richness and moisture to the soaked bread crumbs.

The step that matters

Beating the egg whites to firm peaks. Under-beaten whites stay runny and slide off the pudding, while over-beaten whites turn dry and grainy. Firm peaks hold air that sets into a stable topping during baking.

Swap the orange

How well each one fits the dish's main ingredients (bread, butter, milk, sugar, egg, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against bread, butter, milk, sugar, egg, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
