What each ingredient does

Orange juice
Provides the main liquid and the fresh citrus flavor and acidity of the jelly.
Isinglass
Gelling agent that sets the liquid into a firm jelly as it cools.
Sugar
Adds sweetness and balances the acidity of the orange juice.
Orange rind
Adds aromatic orange oils that deepen the citrus flavor.

The step that matters

Skim the mixture clean without allowing it to boil.. Boiling can cloud the jelly and weaken its set, so the mixture should be kept just below boiling while skimmed.
