I Quixce Beamange, with Almond Cream

Ingredients

Directions

Make the almond milk

  1. Blend the almonds into a smooth paste, adding a few drops of water to prevent oiling.

  2. Pour the boiling quince juice over the almond paste and mix well.

  3. Strain the mixture through a strong cloth, twisting the ends to extract the cream.

Set the cream

  1. Return the juice to the heat, add the sugar, and bring to a boil.

  2. Stir in the isinglass and simmer for 5 minutes, skimming off any scum.

  3. Stir the mixture until it cools slightly, then mold it for serving.

What each ingredient does

Jordan almonds
Provide the creamy body and rich flavor of the cream once blended into a paste.
Quince juice
Supplies the fruity flavor and liquid that carries the almond paste into a cream.
Sugar
Adds sweetness and balances the tartness of the quince juice.
Isinglass
Acts as a gelling agent that sets the cream so it holds its molded shape.

The step that matters

Stir in the isinglass and simmer. Isinglass is a gelatin-like setting agent that must be fully dissolved in the hot liquid before cooling. Simmering dissolves it evenly, and skimming removes scum that would cloud the cream and spoil its texture.

Swap the quince
