What each ingredient does

Gooseberries
Provide the fruit body and natural pectin that help the preserve set as it cools.
Sugar
Adds sweetness and helps the mixture thicken and keep its shape once set.

The step that matters

Stirring in the sugar after 1 hour. Sugar added at the right point in the boil helps the fruit's pectin set the preserve. Adding it too early or boiling too long can change the texture and colour, so timing matters.
