Why it works: Red currant and currant share more aroma than cooks usually use. They rank in the top 5% of all ingredient pairs, and cooks put them together in 57 recipes. Both carry isoamyl acetate, which smells banana, pear. The science ↓
Frfjjch Currant Jelly
Ingredients
Directions
Prepare the juice
Mix the red and white currants in a pot over a gentle fire until they release their juice.
Strain the juice and weigh it.
Make the jelly
For every 4 pounds of juice, break 3 pounds of sugar into large lumps and dip them in cold water.
Boil the sugar until it forms a thick syrup, stirring constantly until it falls in large thick masses from the skimmer.
Pour the currant juice into the syrup immediately and boil quickly for 5 minutes.
Skim off any scum.
Set and store
Pour the jelly into jars or warm glasses.
Set the jars in a cool place to set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Red currants
- Provide the natural pectin and acidity that help the juice gel.
- White currants
- Add more juice and tartness, contributing to the jelly's flavour and set.
- Sugar
- Sweetens the jelly and helps it set by binding water and firming the gel.
The step that matters
Pour the juice into the syrup and boil quickly. Boiling the juice briefly and vigorously helps the pectin and sugar reach the concentration needed to gel. Boiling too long can darken the flavour and weaken the set, so timing matters.
Swap the white currant
How well each one fits the dish's main ingredients (red currant, currant, sugar):
- Raspberryfits better
- White currantthe original
- Vanillafits about as well
- Plumfits about as well
Fit is the average pairing score against red currant, currant, sugar. Candidates are from the same food group and used in at least 100 recipes.
