Why it works: Lemon and orange match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,634 recipes. Both carry 3-hexenal, which smells apple, fruity. The science ↓
Oxford Punch
Ingredients
Directions
Prepare the base
Rub the rinds of 3 lemons with sugar lumps to extract essence.
In a large jug, combine the lemon essence, thin peels of 2 Seville oranges and 2 lemons, juices of 4 Seville oranges and 10 lemons, and 6 glasses of calf’s feet jelly.
Stir well, then pour in 2 quarts of boiling water.
Cover the jug and set it near the fire for 15 minutes.
Strain the mixture through a sieve into a bowl or jug.
Finish and sweeten
Sweeten with a bottle of capillaire, then add ½ pint of white wine, 1 pint of French brandy, 1 pint of Jamaica rum, and 1 bottle of orange shrub while stirring.
If not sweet enough, add more sugar or capillaire to taste.

What each ingredient does
- Lemon juice
- Provides the sharp acidity that balances the sweetness of the syrup and spirits.
- Seville orange juice
- Adds bitter-sharp acidity and aroma to the punch base.
- Calf’s feet jelly
- Adds body and a gelatin-based silkiness to the punch.
- French brandy
- Contributes spirit strength and warm, fruity aroma.
- Jamaica rum
- Adds spirit strength and deep, molasses-like flavour.
- Capillaire
- Sweetens the punch, balancing the acidity of the citrus.
The step that matters
Straining before adding the spirits. Straining removes peel, pulp and any solids from the infused base so the finished punch is clear and smooth. Adding the wine and spirits after straining keeps their flavour and alcohol from being diluted or altered by the hot, pulpy mixture.

Fit is the average pairing score against orange, syrup, white wine, brandy, rum. Candidates are from the same food group and used in at least 100 recipes.
