What each ingredient does

Asparagus
Is the main vegetable, cooked until just tender so it keeps a pleasant bite.
Bread
Forms the toasted base that soaks up the asparagus cooking water and melted butter.
Butter
Adds richness and moisture, coating the toast and the asparagus.

The step that matters

Boil the asparagus until just tender. Asparagus turns dull, soft and olive-coloured when overcooked, because prolonged heat breaks down its cell walls and pigments. Pulling it from the water as soon as it is tender keeps its texture and bright green colour.

Swap the asparagus

How well each one fits the dish's main ingredients (bread, butter):

  1. Leekfits about as well
  2. Potatofits about as well
  3. Tomatofits about as well
  4. Asparagusthe original

Fit is the average pairing score against bread, butter. Candidates are from the same food group and used in at least 100 recipes.
