What each ingredient does

Onions
Browned onions build the savoury, sweet base of the gravy's flavour.
Butter
Fat for frying the onions, adding richness and browning flavour.
Beer
Liquid that adds malty depth as the mixture simmers.
Mushroom catsup
Concentrated mushroom flavour that adds savoury depth.
Soy sauce
Adds salty, savoury depth that rounds out the gravy.
Essence of anchovy
Adds deep savoury umami flavour without a distinct fishy taste.

The step that matters

Remove the fat after cooling. Butter and fat from the simmered mixture float on the surface as it cools. Skimming once it has cooled and set lets the fat be lifted off cleanly, leaving a lighter, less greasy gravy.

Swap the mace

How well each one fits the dish's main ingredients (onion, butter, beer, lemon, clove, walnut, mushroom):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against onion, butter, beer, lemon, clove, walnut, mushroom. Candidates are from the same food group and used in at least 100 recipes.
