Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Clean and singe the chickens.

  2. If the chickens are young, keep them whole; if large, cut into joints and remove skin.

  3. Wash and dry the chicken pieces.

  4. Season the chicken pieces with salt, white pepper, nutmeg, and mace.

  5. If the chicken is whole, place a bit of butter rolled in flour and some mixed spices inside the chickens.

Assemble and bake

  1. Arrange the chicken in a dish with the livers, gizzards, and hearts, all well seasoned.

  2. Add white stock, white wine, lemon pickle (or mushrooms), and hard-boiled egg yolks.

  3. Cover with puff pastry and bake at 400°F (200°C) for 1 hour.

  4. For variation, add macaroni simmered in milk and water, and omit lemon pickle or mushrooms.

What each ingredient does

Chicken
Provides the main meat, which becomes tender and flavourful during the long bake.
Butter
Adds richness and fat that carries flavour and helps the pastry-like coating brown.
Flour
Thickens the butter and stock into a sauce, giving the filling body.
White stock
Supplies moisture and savoury flavour that forms the sauce around the chicken.
Hard-boiled egg yolks
Enrich the sauce with fat and help thicken it as the pie bakes.
