Gooseberry Wine to Resemble Champagne

Ingredients

Directions

  1. Select gooseberries that are full grown but not ripe, preferably those with less flavor when ripe.

  2. Remove unsound or bruised fruit and any remaining blossoms or fruit-stalks.

  3. Place the cleaned gooseberries in a 15 to 20-gallon tub.

  4. Bruise the gooseberries to release their juices.

  5. Add cream of tartar to promote fermentation.
