Ingredients

Directions

  1. Truss the partridges as you would for boiling, singe, wipe, and lard them with large lard.

  2. Season the partridges with salt, pepper, spices, herbs, parsley, and onions.

  3. Make a filling using the livers, veal, or lard, and season it similarly.

  4. Beat the filling in a mortar, adding eggs and a little water until well combined.

  5. Cut open the backs of the partridges and stuff them with some of the filling.

  6. Roll out the pastry and shape it as directed for pate de jambon.

  7. Spread some filling on the bottom of the pastry, then place the stuffed partridges inside.
