What each ingredient does

Mullets
The main fish, which firms and flakes as it cooks gently in the liquid.
Butter
Adds richness and carries flavour, helping keep the fish moist during cooking.
Mushrooms
Release moisture and savoury flavour into the cooking liquid.
Chablis wine
Provides acidity and aroma, and forms the poaching liquid with the lemon juice.
Lemon juice
Adds acidity that brightens the flavour of the sauce and balances the butter.

The step that matters

Simmer gently for 30 minutes. Once the liquid boils, the fish must cook at a gentle simmer so the flesh stays moist and tender rather than breaking apart or toughening.

Flavor stand-ins for the nutmeg

How well each one fits the dish's main ingredients (butter, mushroom, parsley, shallot, pepper, lemon, wine):

  2. Tarragonbetter flavor fit
  3. Marjorambetter flavor fit
  4. Nutmegthe original

Fit is the average pairing score against butter, mushroom, parsley, shallot, pepper, lemon, wine. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
