Truffles Croustades En Surprise

Ingredients

Directions

  1. Brush and wash the truffles in warm water.

  2. Dress the truffles in Champagne wine and let them cool.

  3. Lay the truffles on their flattest side and pierce them to three-fourths of their depth with a root-cutter.

  4. Carefully remove the cover with a knife and empty the truffles using a small teaspoon.

  5. Fill the truffles with a puree of fowl or game, or a mixture of fowl and truffles, or cocks’ kidneys with truffles.

  6. Sauce the filled truffles with Bechamel, or fill them with small escalopes of fat livers or fillets of larks with small mushrooms, saucing with Espagnole or Allemande.

  7. Cover the filled truffles with the round pieces removed earlier.
