Savoy Biscuit

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Rub the oranges on a lump of sugar, scrape off the colored part, dry it in the oven, pound it, and sift it.

  3. Separate the eggs, placing the whites in one bowl and the yolks in a larger bowl.

  4. Add half of the sugar to the yolks and mix until smooth.

  5. Add the remaining sugar and beat the mixture for 20 minutes.

  6. Whip the egg whites until firm, adding a pinch of powdered alum to prevent them from becoming too stiff.

  7. Gently mix part of the whipped whites into the yolk mixture, then fold in the remaining whites carefully.

  8. Sift the potato flour into the batter and stir until smooth and runny.

  9. Pour a few spoonfuls of batter into the bottom of the mold to prevent air bubbles.
