The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the bulk and chewy structure of the nougat.
Powdered sugar
Melts into a syrup that binds the almonds and sets firm as it cools.
Sugar in grains
Adds crunchy sweetness to the surface when scattered on top.
Vanilla stick
Contributes aroma to the finished nougat.

The step that matters

Melting the sugar over low heat. Sugar can scorch or turn bitter if overheated, while too little heat leaves it grainy. Gentle heat lets it melt evenly into a clear syrup that will set properly once the almonds are added and the mixture cools.

Swap the almond

How well each one fits the dish's main ingredients (sugar, vanilla):

  1. Chestnutfits about as well
  2. Almondthe original
  3. Hazelnutfits about as well
  4. Macadamia nutfits less well

Fit is the average pairing score against sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
