Ingredients

Directions

  1. Cut the head from the boar close to the shoulders, keeping the neck intact.

  2. Singe the head carefully, especially the ears, and scrape it clean.

  3. Bone the head by cutting lengthwise underneath without cutting the skin.

  4. Rub the head with seasoning spice and saltpetre, then strew with herbs and vegetables.

  5. After two days, rub it again with seasoning and leave for 4 to 6 days.

  6. Remove herbs and wipe the head with a napkin.

  7. Cut meat from the thick part of the neck and place it on the muzzle for even thickness.

  8. Cover the surface with a forcemeat made from chopped pork, bacon, seasoning, eggs, and sweet herbs.
