What each ingredient does

Chicken
Provides the main protein, which browns in butter and then cooks through in the gravy.
Onions
Soften when fried and add sweetness and body to the curry sauce.
Curry powder
Supplies the spice blend that gives the dish its flavour and aroma.
Gravy
Forms the sauce that covers the chicken and thickens as it simmers.
Lemon juice
Adds acidity that brightens the rich, spiced sauce.

The step that matters

Simmer over low heat until the gravy thickens. Gentle heat lets the sauce reduce and thicken slowly without scorching on the bottom of the pan or toughening the chicken.
