What each ingredient does

Chestnuts
Give the stuffing and sauce a starchy, soft body that thickens and absorbs flavour.
Bacon
Adds fat and savoury flavour that keeps the liver mixture moist and rich.
Fowl's liver
Adds deep, savoury richness and a smooth, binding texture to the stuffing.
Butter
Adds fat and richness to the sauce and helps it coat the fowl.
White wine
Adds acidity and aroma to the sauce, balancing the richness of the butter.
