Break down into a pulp that thickens and gives the soup its body.
Butter
Adds richness and a smooth, rounded mouthfeel to the soup.
Young peas
Provide fresh, sweet green flavour and tender texture.
Cucumbers
Add a mild, cool, watery freshness to the soup.
Sugar
Rounds out flavour and balances the savoury notes.
