An Oyster Pie with Sweet-breads

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Boil the sweetbreads, then slice them thinly.

  3. Line a dish with puff pastry.

Assemble the pie

  1. Layer the bottom with bread crumbs, then sweetbreads, and more bread crumbs.

  2. Add the cleaned oysters on top.

  3. Repeat the layers if necessary.

  4. Pour the oyster liquor over the layers, then add essence of anchovy and veal gravy.

  5. Top with another layer of bread crumbs and dot with butter.

  6. Cover with a crust and bake until lightly golden.

Serve

  1. Before serving, pour in warm gravy and a little lemon juice.

What each ingredient does

Sweetbreads
Provide the tender, rich meat that forms the body of the filling.
Oysters
Add briny, savoury flavour and a soft, moist texture to the layers.
Bread crumbs
Absorb the cooking liquids and keep the layers from becoming soggy.
Butter
Adds richness and helps the top crust brown during baking.
Puff pastry
Forms a flaky, crisp crust that holds the filling and browns in the oven.

The step that matters

Baking until lightly golden. The crust needs enough heat to brown and set, but over-baking dries out the oysters and sweetbreads. Watch for light golden colour rather than a deep brown.
