To Roast Larks

Ingredients

Directions

  1. Truss the larks and place a sage or vine leaf over each breast.

  2. Skewer the larks, placing a thin piece of bacon between each one.

  3. Tie the skewer to the spit and roast the larks over a clear, brisk fire.

  4. Baste the larks with butter.

  5. Remove the leaves and sprinkle the larks with a mixture of bread crumbs and a little flour.

  6. Once roasted, arrange the larks on a dish with fried bread crumbs in the center.
