Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soles
Forms the main body of the dish, cooking to a flaky texture.
Egg
Binds the bread crumbs to the fish so they stick during frying.
Fine bread crumbs
Form a crisp, golden coating when fried in fat.
Olive oil, butter, lard, or dripping
Conducts heat to crisp the coating and browns the crumbs.

The step that matters

Fry the fish for 3 to 5 minutes on one side, then turn and cook until done.. The fat must be hot enough before the fish goes in, or the coating absorbs oil and turns greasy instead of crisp. Turning once cooks the fish through without breaking the coating.

Swap the parsley

How well each one fits the dish's main ingredients (olive, egg, bread):

  1. Capersfits better
  2. Parsleythe original
  3. Nutmegfits less well
  4. Garlicfits less well

Fit is the average pairing score against olive, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
