Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 14,037 recipes mention both. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Very Common White Sauce
Ingredients
Directions
Clean the neck and feet of a fowl.
Stew them in 1/2 pint of water until reduced to less than 1/4 pint.
Add lemon rind, mace, parsley, salt, and peppercorns.
Strain the mixture.
Thicken and flavor it as per the previous recipe.
Mix in more than half the quantity of cream.
For liver sauce, boil chicken liver in the gravy for 6 minutes, then mash it to a smooth paste and strain it.
Add the white sauce to the liver and stir in strained lemon juice before serving.

Fit is the average pairing score against lemon, parsley, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
