Chestnut Forcemeat

Ingredients

Directions

Prepare the chestnuts

  1. Remove the outer skin from the chestnuts and blanch them in hot water for 1‑2 minutes.

  2. Transfer the blanched chestnuts to cold water, then dry them with a cloth and weigh.

  3. Stew the chestnuts gently in veal gravy for 15‑20 minutes until tender.

Make the forcemeat

  1. Drain the chestnuts and let them cool, then pound them smooth with half their weight of bacon or an equal amount of butter.

  2. Mix in the bread crumbs, lemon rind, salt, mace or nutmeg, cayenne, and egg yolks.

Shape and fry

  1. Mold the mixture into cakes using a knife, spoon, or fingers, and dust with flour.

  2. Fry the cakes slowly for 10‑15 minutes until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the bulk and starchy, tender body of the forcemeat.
Veal gravy
Keeps the chestnuts moist and adds savory flavor during stewing.
Bacon or butter
Adds fat for richness and a smooth, cohesive texture.
Bread crumbs
Absorb moisture and help the cakes hold their shape.
Egg yolks
Bind the mixture and set during frying to hold the cakes together.

The step that matters

Pound the chestnuts smooth before mixing. Fully smooth chestnuts with the fat give an even texture; lumps stay firm and make the cakes crumble or cook unevenly when fried.

Swap the mace

How well each one fits the dish's main ingredients (chestnut, veal, butter, bread, lemon, egg):

  1. Parsleyfits better
  2. Sagefits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against chestnut, veal, butter, bread, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
