Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox-tails
Provide the meat and collagen that, after long simmering, turn tender and enrich the gravy.
Onion
Adds aromatic sweetness and flavour to the broth as it simmers.
Carrots
Contribute natural sweetness and body to the stewing liquid and the served vegetables.

The step that matters

Simmering until tender. Ox-tail connective tissue needs long, gentle simmering to break down into gelatin. Cooking too fast or stopping early leaves the meat tough and the gravy thin.

Swap the onion

How well each one fits the dish's main ingredients (pepper, clove, carrot, parsley):

  1. Parsnipfits better
  2. Turnipfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against pepper, clove, carrot, parsley. Candidates are from the same food group and used in at least 100 recipes.
