What each ingredient does

Butter
Enriches the sauce with fat and adds a rich, savoury flavour.
Flour
Thickens the sauce as it cooks with the liquid, giving it body.
Egg yolks
Thicken the sauce as they heat and add richness and a smooth texture.
Beef
Provides the main meat and savoury flavour of the hash.
Onion
Adds sweetness and savoury depth as it browns in the butter.

The step that matters

Thickening with egg yolks. Egg yolks thicken through gentle heat. If the sauce is too hot or boils after adding them, the yolks can scramble and turn grainy. Add them near boiling and keep the heat low.
