To Roast Pork

Ingredients

Directions

Prepare the pork

  1. Score the skin of the pork in narrow strips before roasting.

Roast

  1. Place the pork at a distance from the fire to heat through without hardening the skin.

  2. Baste the pork constantly while it roasts.

  3. If using sage and onion stuffing, loosen the skin at the knuckle and insert the stuffing.

  4. Brush the skin with clarified butter or salad oil if the meat is not very fat.

  5. Roast the leg of pork for 3 hours, the loin for 2 to 2.5 hours, and the spare rib for 1.5 hours.

What each ingredient does

Pork
Provides the meat, and its fat renders and bastes the joint as it roasts.
Clarified butter or salad oil
Coats the skin so it browns and crisps more evenly in the oven.

The step that matters

Place the pork at a distance from the fire. Intense direct heat dries and hardens the skin before the thick meat has heated through. Gentler, indirect heat lets the interior warm evenly while the skin stays tender enough to crisp later.

Swap the apple

How well each one fits the dish's main ingredients (pork, butter):

  1. Applethe original
  2. Coconutfits about as well
  3. Avocadofits less well
  4. Peachfits less well

Fit is the average pairing score against pork, butter. Candidates are from the same food group and used in at least 100 recipes.
