Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the lean meat base that gives the sausage its main body and texture.
Lean pork
Adds meaty flavour and body alongside the veal.
Inside fat of pig
Adds fat that keeps the mixture moist and tender as it cooks.
Coarse sea salt
Seasons the meat and helps draw out and bind its proteins.

The step that matters

Forming the cakes less than 1 inch thick. Thick cakes can stay raw inside while the outside browns. Keeping them thin lets the centre cook through in the stated frying time.
