Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl
Provides the main body of the dish, with the breast stuffed to add moisture and flavour.
Forcemeat
Fills the breast, adding moisture and savoury flavour as the bird roasts.
Fine bread-crumbs
Form a thick crust that browns in the fire and helps seal in moisture.
Lukewarm butter
Adds fat that carries browning and gives the crumb coating a rich flavour.

The step that matters

Returning the fowl to the fire. Browning depends on heat and fat on the surface. If the bird is overcooked before crumbing, or the crumb coat is left too pale or too dark, the crust will not brown evenly. Watch the colour closely and remove it once it is a clear, light brown.
