To Roast a Pheasant

Ingredients

Directions

  1. Pluck the feathers from the pheasant and cut a slit in the back of the neck to remove the crop.

  2. Draw the bird and clean the inside with a damp cloth; wipe the outside with a dry cloth.

  3. Cut off the toes and tuck the head under the wing with the bill along the breast.

  4. Skewer the legs without crossing them and flour the pheasant well.

  5. Roast the pheasant over a brisk fire, basting constantly with well-flavored butter.

  6. Serve with bread sauce and brown gravy.
