Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox tongue
Provides the main body of meat that is minced and potted.
Butter
Adds richness and moisture, and binds the pounded meat into a smooth paste.
Well-roasted meat
Adds firmness to the mixture when included.

The step that matters

Pound the minced meat with the butter until fine. Fat coats and separates the meat fibres as they are worked, so a fine, smooth paste forms only when the meat is pounded thoroughly. Stopping early leaves a coarse, crumbly texture.

Swap the mace

How well each one fits the dish's main ingredients (butter, nutmeg, clove, meat):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against butter, nutmeg, clove, meat. Candidates are from the same food group and used in at least 100 recipes.
