To Boil Asparagus

Ingredients

Directions

Prepare

  1. Scrape the stems of the asparagus lightly from one to two inches of the green points and place them in cold water.

  2. Tie the asparagus in equal-sized bunches and cut the large ends evenly.

Boil and serve

  1. Bring plenty of water to a boil and add coarse sea salt.

  2. Boil the asparagus until tender, about 20 to 25 minutes, then remove immediately to preserve color and flavor.

  3. Quickly dip the toasted bread into the boiling water and place the asparagus on top with the points meeting in the center.

  4. Serve with rich melted butter and vinegar if desired.

What each ingredient does

Asparagus
Its tender stalks cook through in boiling water, becoming soft while the tips stay delicate.
Rich melted butter
Adds fat and richness that carries flavor and coats the warm asparagus.
Bread, sliced
Soaked briefly in the boiling water, it soaks up moisture and gives the asparagus a base to rest on.

The step that matters

Remove the asparagus immediately after boiling. Continued heat keeps cooking the spears past tender, dulling their bright green color and softening their flavor. Removing them promptly preserves both.

Swap the asparagus

How well each one fits the dish's main ingredients (bread, butter, vinegar):

  1. Shallotfits better
  2. Mustardfits better
  3. Capsicumfits better
  4. Asparagusthe original

Fit is the average pairing score against bread, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
