Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the crisp, watery base that the dressing coats and seasons.
Salad oil
Coats the cucumber slices, carrying flavor and adding a smooth, rich mouthfeel.
Chili vinegar
Adds sharp acidity and heat that brightens the cucumbers and balances the oil.

The step that matters

Draining the cucumbers. Cucumbers release water when salted or dressed. If excess water is not drained first, the dressing thins into a watery pool and the slices soften, so the flavor is diluted.
