Stewed Chestnuts

Ingredients

Directions

Prepare the chestnuts

  1. Remove the outer rind from the chestnuts.

  2. Place them in a large saucepan of hot water and bring to a boil.

  3. Once the second skin peels off easily, transfer the chestnuts to cold water and peel them dry.

Stew the chestnuts

  1. In a stewpan, combine the chestnuts with enough gravy to nearly cover them.

  2. Stew gently for 45 minutes to 1 hour until tender but unbroken.

  3. If desired, add salt, cayenne, or thickening.

  4. Brown the chestnuts in butter before stewing.

  5. Add lemon rind to the gravy.

  6. Place bay leaves and ham under the chestnuts while cooking, and do not serve the ham.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Starchy body that softens into a tender, mealy texture when stewed slowly.
Beef or veal gravy
Cooking liquid that supplies moisture and savory flavor as the chestnuts stew.
Butter
Browns the chestnut surface, adding color and nutty richness.

The step that matters

Stew gently until tender but unbroken. Gentle heat lets the chestnut starch soften evenly, while vigorous boiling can break the chestnuts apart and ruin their shape.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (chestnut, beef, pepper, butter, ham):

  1. Lemonthe original
  2. Figfits about as well
  3. Cherryfits less well
  4. Limefits less well

Fit is the average pairing score against chestnut, beef, pepper, butter, ham. Candidates are from the same food group and used in at least 100 recipes.
