Oranges Filled with Jelly
Ingredients
Directions
Cut a round opening at the top of each orange, about the size of a shilling.
Carefully remove the pulp without breaking the rinds and place them in cold water.
Make jelly from the strained juice of the oranges, ensuring it is clear.
Color half of the jelly with prepared cochineal to create a rose color, leaving the other half pale.
Once the jellies are nearly cold, drain and wipe the orange rinds.
Fill the rinds with alternating stripes of the two jellies.
When the jellies are completely cold, cut the oranges into quarters.
Arrange the quarters on a dish with a few light branches of myrtle for decoration.
