Blamange Rubank, Or, Striped Blamange

Ingredients

Directions

  1. Prepare 1 quart of blamange, making it a little firmer than usual.

  2. Divide the blamange into three or four equal portions.

  3. To one portion, add enough prepared spinach juice to achieve the desired green color.

  4. To another portion, mix in liquid cochineal or carmine.

  5. For a third portion, add a few drops of strong saffron infusion or mix boiling blamange with beaten egg yolks.

  6. Thicken the egg mixture over gentle heat with a spoonful or two of milk.

  7. For additional color, mix in smooth, boiled chocolate with a small amount of water.

  8. Pour the different colored blamanges into a mold in half-inch layers, ensuring each layer is cool before adding the next.

  9. Rub the insides of the mold with a drop of pure salad oil before pouring in the blamange.
