What each ingredient does

Strawberries
Provide the fruit flavour, colour and natural pectin that help the jelly set.
Sugar
Adds sweetness and, with boiling, helps the juice thicken into a set jelly.

The step that matters

Boiling the juice with sugar. Sugar and fruit juice must boil hard long enough for the pectin and acid to set the jelly. Too little boiling leaves it runny, while overcooking can make it dark and stiff.
