Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Anchovies
- Break down into the base, giving the sauce its savoury depth and salty richness.
- White wine vinegar
- Adds acidity that helps draw flavour from the anchovies and spices.
- Sherry
- Adds body and a mellow, slightly sweet, fortified wine character.
- Shallots
- Add a mild aromatic onion flavour that rounds out the sauce.
The step that matters
Boil the mixture for 30 minutes. Long simmering softens the anchovy bones and fully blends the spices into the liquid. Boiling too hard or too briefly can leave the flavour harsh or uneven.
Swap the ginger
How well each one fits the dish's main ingredients (white wine, vinegar, sherry, clove, shallot, pepper, nutmeg):
- Thymefits better
- Tarragonfits better
- Allspicefits better
- Gingerthe original
Fit is the average pairing score against white wine, vinegar, sherry, clove, shallot, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
