Ingredients

Directions

Cure the meat

  1. Salt the beef and pork with coarse sea salt, coarse sugar, saltpetre, black pepper, and allspice.

  2. After 5-6 days, chop the meat finely, ensuring it is free from skin and gristle.

  3. If the pork fat is less than half the weight of the lean meat, add beef suet.

  4. Season the mixture with additional pepper and minced eschalot or garlic.

Stuff and finish

  1. Stuff the mixture into the cleaned ox gut and tie it into lengths of 8-9 inches.

  2. Smoke the sausages like hams or red herrings.

  3. Boil or bake the sausages.

  4. Slice them when cold for sandwiches.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the main lean meat structure and savoury flavour of the sausage.
Pork fat and lean pork
Supplies fat that keeps the sausage moist and tender as it cooks and cools.
Saltpetre
Cures the meat, helping it keep its pink colour and resist spoilage during curing.
Coarse sea salt
Draws out moisture and seasons the meat during the curing period.
Coarse sugar
Balances the salt and adds mild sweetness to the cured meat.

The step that matters

Chop the meat finely after curing. Fine chopping and removing skin and gristle gives an even, tender texture. Coarse pieces or tough connective tissue would make the sausage chewy when sliced cold.

Swap the garlic

How well each one fits the dish's main ingredients (beef, pork, sugar, pepper, allspice):

  1. Clovefits better
  2. Cinnamonfits better
  3. Marjoramfits better
  4. Garlicthe original

Fit is the average pairing score against beef, pork, sugar, pepper, allspice. Candidates are from the same food group and used in at least 100 recipes.
