Raised Pork Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Season the meat with pepper, coarse sea salt, and sage.

  3. Fill the pie crust with the seasoned meat.

  4. If using, add a little stiff jelly on top of the meat.

  5. Close the pie securely and brush the top with beaten egg.

  6. Bake for two hours, covering with buttered paper to prevent burning.

  7. Once done, you may add a little gravy and prepared mustard, ensuring the gravy will jelly.
