Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and the food that the yeast ferments into alcohol and carbonation.
Egg white
Collects impurities as it sets, so skimming leaves a clearer liquid.
Ginger
Adds its sharp, warm aroma and flavour to the beer.
Lemon
Adds acidity and citrus aroma that balance the sweetness.
Yeast
Ferments the sugar, producing carbon dioxide for fizz and alcohol.

The step that matters

Let the mixture cool before stirring in the yeast. Yeast is killed by hot liquid, so the mixture must cool enough that the yeast stays alive and can ferment the sugar.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger, cream, egg, brandy, hops):

  1. Vanillafits better
  2. Peachfits about as well
  3. Applefits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, ginger, cream, egg, brandy, hops. Candidates are from the same food group and used in at least 100 recipes.
