Parsnip Wine

Ingredients

Directions

Make the liquor

  1. Bring 2 gallons of water to a boil in a large pot.

  2. Add 8 pounds of cleaned and sliced parsnips and boil until tender.

  3. Drain the parsnips through a sieve or colander without pressing.

  4. Return the drained parsnips to the pot and add 56 pounds of loaf sugar.

  5. Bring the mixture to a boil again, then add 6 ounces of hops and boil for 2 hours.

Ferment and clear

  1. After boiling, add yeast and let it sit in a warm place for 4 days to ferment.

  2. Once fermentation is complete, transfer to a container and cover with paper.

  3. Replace the paper as needed if it bursts during fermentation.

  4. Optionally, clear the wine with isinglass.

What each ingredient does

Parsnips
Provide the main flavour and body of the wine, giving it its character.
Loaf sugar
Supplies the sugar that yeast converts to alcohol during fermentation, and adds sweetness.
Yeast
Ferments the sugars into alcohol and carbon dioxide, turning the liquid into wine.
Hops
Add bitterness and aroma, balancing the sweetness of the sugar.
